  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini (about 1 medium zucchini), squeezed dry
  • ½ cup (90g) mini chocolate chips
  • 1 teaspoon espresso powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper or grease it well.
  2. Shred the zucchini using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel or paper towels and squeeze out as much moisture as possible.
  3. In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt. Set aside.
  4. In a large bowl, whisk the granulated sugar, brown sugar, and melted unsalted butter until smooth and glossy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. If using, stir in the espresso powder to intensify the chocolate flavor.
  7. Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
  8. Fold in the shredded zucchini until evenly distributed.
  9. Stir in the mini chocolate chips.
  10. Pour the batter evenly into the prepared baking pan and smooth the top with a spatula.
  11. Bake for 25–30 minutes, checking at 25 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but no wet batter.
  12. Let the brownies cool completely in the pan on a wire rack to set the fudgy texture.
  13. Lift the brownies out using the parchment paper edges and cut into 16 squares. Serve and enjoy.
