A bright and bold salsa combining sweet ripe peaches with spicy jalapeños, fresh lime juice, and cilantro. Perfect for summer parties and easy to prepare in just 15 minutes.

  • 3 medium ripe peaches, diced (about 1 1/2 cups)
  • 12 fresh jalapeños, finely chopped (seeds removed for milder salsa)
  • 1/2 cup packed fresh cilantro leaves, chopped
  • Juice of 2 medium limes (about 2 tablespoons)
  • 1/4 cup red onion, finely diced
  • Salt to taste (preferably kosher salt)
  • Pinch of freshly ground black pepper (optional)

Instructions

  1. Wash, pit, and dice the peaches into roughly 1/2-inch cubes.
  2. Slice jalapeños in half lengthwise, remove seeds and membranes if desired, then finely chop.
  3. Finely dice 1/4 cup of red onion.
  4. Roughly chop 1/2 cup packed fresh cilantro leaves, avoiding thick stems.
  5. In a medium mixing bowl, combine diced peaches, jalapeños, red onion, and cilantro.
  6. Add freshly squeezed lime juice from 2 limes and sprinkle with salt and a pinch of black pepper.
  7. Stir gently to combine without mashing the peaches.
  8. Let the salsa sit at room temperature for about 10 minutes to allow flavors to meld (optional).
  9. Taste and adjust seasoning with more salt, lime juice, or jalapeño if desired.

Notes

Use firm yet ripe peaches to avoid mushy salsa. Remove jalapeño seeds to control heat. Stir gently to keep peaches intact. Prepare just before serving for best freshness. Optional additions include smoked paprika, honey, or swapping jalapeños for serranos for more heat.
