Fresh Watermelon Feta Mint Salad with Zesty Honey Lime Dressing

A refreshing summer salad combining juicy watermelon, salty feta, and fresh mint, tossed in a zesty honey lime dressing. Perfect for hot days or as a bright side dish for gatherings.

  • 4 cups seedless watermelon, cubed (about 600g)
  • 1 cup crumbled feta cheese (about 150g)
  • 1/4 cup fresh mint leaves, roughly chopped (about 10g)
  • 2 tablespoons honey
  • Juice of 2 medium limes (about 3 tablespoons or 45ml)
  • 2 tablespoons extra virgin olive oil
  • Pinch of salt, to taste
  • 1/4 teaspoon freshly ground black pepper (optional)

Instructions

  1. Cut about 4 cups of seedless watermelon into bite-sized cubes. Set aside in a medium mixing bowl.
  2. Rinse and pat dry fresh mint leaves. Roughly chop to make about 1/4 cup. Toss the chopped mint with the watermelon cubes gently.
  3. In a small bowl, whisk together honey, lime juice, olive oil, salt, and black pepper until the honey dissolves and the dressing is smooth.
  4. Crumble feta cheese over the watermelon and mint mixture. Gently fold the feta in to keep texture contrast.
  5. Drizzle the honey lime dressing over the salad ingredients. Toss lightly but thoroughly to coat each piece.
  6. Optional: Chill the salad in the fridge for 10-15 minutes before serving to let flavors meld.
  7. Transfer the salad to a serving bowl or platter. Garnish with whole mint leaves and serve immediately.

Notes

For a vegan version, replace feta with plant-based cheese or omit and add toasted nuts. Use basil or cilantro if mint is unavailable. Drain excess watermelon juice before adding feta to avoid sogginess. Whisk dressing well to emulsify. Serve chilled or at room temperature. Store leftovers in an airtight container in the fridge for up to 24 hours, draining excess liquid before serving again.
