Instructions

  1. Prep the peaches: Wash peaches. Bring a large pot of water to a boil. Score a small ‘X’ on the bottom of each peach. Drop peaches into boiling water for 30-45 seconds, then transfer to a bowl of ice water. Peel, pit, and chop into ¼-inch pieces (about 4 cups).
  2. Grate the ginger: Peel a 2-inch piece of fresh ginger using a spoon, then grate finely with a microplane or fine box grater. Measure 1 tablespoon.
  3. Mix fruit and sugar: In a large mixing bowl, combine chopped peaches, sugar, and grated ginger. Stir gently with a wooden spoon. Let sit for 10 minutes until juices release.
  4. Prepare pectin: In a small bowl, whisk the box of pectin with ¼ cup of the sugar (scooped from the 2 cups). Set aside.
  5. Add lemon juice: Squeeze fresh lemon and measure 2 tablespoons. Add to peach mixture and stir well.
  6. Combine everything: Pour pectin-sugar mixture into peach mixture. Stir continuously for 3 minutes until thickened slightly.
