  • ½ cup (75g) fresh whole raspberries
  • A handful of fresh mint leaves (optional)

Instructions

  1. Cut a thick, round slice of seedless watermelon about 1 inch (2.5 cm) thick. Trim edges if needed to make a clean circle or wedge shape. Pat dry gently with paper towels to remove excess moisture.
  2. In a mixing bowl, combine 8 ounces (225g) of softened cream cheese with 2 tablespoons of honey and 1 teaspoon of vanilla extract. Using an electric mixer or whisk, beat the mixture until smooth, creamy, and slightly fluffy.
  3. Using a spatula or the back of a spoon, spread the cream cheese mixture evenly over the watermelon slice, leaving about a ½-inch border to mimic a pizza crust edge.
  4. Arrange the blueberries, sliced strawberries, and whole raspberries in a patriotic pattern over the cream cheese. Tuck in fresh mint leaves for garnish if desired.
