A simple yet elegant summer salad featuring smoky grilled peaches, creamy burrata, and a tangy-sweet honey balsamic glaze. Perfect for a light, indulgent meal or entertaining guests.

Ingredients

Scale
  • 34 ripe but firm peaches, halved and pitted
  • 1 (8-ounce) ball burrata cheese
  • 4 cups mixed salad greens (arugula, baby spinach, or spring mix)
  • 2 tablespoons honey
  • 2 tablespoons aged balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • A handful fresh basil leaves, torn (optional)
  • 1/4 cup toasted pine nuts or sliced almonds

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 5-7 minutes).
  2. Rinse and pat dry peaches. Cut in half and remove pits. Brush cut sides lightly with olive oil.
  3. Place peaches cut side down on the grill. Grill for 3-4 minutes until grill marks appear and peaches soften. Flip and grill skin side for 2-3 minutes. Peaches should be tender but hold shape.
  4. In a small saucepan over low heat, combine honey and balsamic vinegar. Stir gently and simmer until slightly thickened, about 5 minutes. Remove from heat and let cool slightly.
  5. On a large serving platter, spread mixed greens evenly. Tear or cut burrata into large chunks and scatter over greens.
  6. Arrange warm grilled peach halves over salad, cut side up.
  7. Sprinkle torn basil leaves and toasted nuts on top. Drizzle honey balsamic glaze over salad, then drizzle olive oil. Season with salt and freshly ground black pepper to taste.
  8. Serve immediately while peaches are still warm.

Notes

Use firm but ripe peaches to prevent mushiness on the grill. Keep the grill well-oiled to avoid sticking. Simmer honey and balsamic glaze gently to avoid burning. Add burrata just before serving to maintain creaminess. For dairy-free, substitute burrata with plant-based cheese or tofu. Nuts can be omitted or replaced with seeds for nut-free version. Leftovers should be stored separately and salad assembled fresh.
