  • 4 large fresh ripe peaches (about 2 pounds or 900 grams)
  • 1 tablespoon (15 ml) fresh lemon juice
  • Optional: 1-2 teaspoons (5-10 ml) honey or maple syrup

Instructions

  1. Wash and dry the peaches under cool water, then pat dry with a clean towel.
  2. Slice each peach in half, twist to separate halves, remove the pit, and slice each half into 1/4-inch (6 mm) thick slices.
  3. Place peach slices in a large bowl and drizzle with 1 tablespoon (15 ml) fresh lemon juice; toss gently to coat evenly.
  4. Line a rimmed baking sheet with parchment paper and arrange peach slices in a single layer without touching.
  5. Freeze the slices on the baking sheet for 2-3 hours or until completely frozen solid.
  6. Transfer frozen peach slices to freezer-safe bags or containers, squeeze out excess air, seal, and label with the date.
  7. Store in the freezer at 0°F (-18°C) or below for up to 6 months, best used within 3 months.
  8. Use frozen slices directly in smoothies (about 1 cup or 150 grams per smoothie) without thawing.

Notes

Freeze peach slices in a single layer to prevent clumping. Use ripe but firm peaches for best texture. Lemon juice prevents browning. Do not thaw before blending to maintain smoothie texture. Use within 3 months for best flavor.
