These festive and flavorful sliders combine juicy beef patties, creamy blue cheese, fresh tomato, and tangy pickles with a quick secret sauce, perfect for summer parties and casual gatherings.

  • 1 lb ground beef (80/20 blend recommended for juicy, flavorful patties)
  • 12 small slider buns (soft and slightly sweet work best)
  • ½ cup blue cheese crumbles (strong, creamy, and tangy)
  • 1 medium tomato, thinly sliced
  • About 12 small iceberg lettuce or baby spinach leaves
  • 12 thin dill pickle slices
  • Salt and freshly ground black pepper to taste
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon hot sauce (like Frank’s RedHot, adjust to heat preference)
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 teaspoon fresh lemon juice
  • Optional: a pinch of sugar or honey

Instructions

  1. In a large bowl, gently mix the ground beef with about 1 teaspoon salt and ½ teaspoon black pepper. Avoid overworking the meat.
  2. Divide the meat into 12 equal portions (about 1.3 oz / 37 g each) and gently form into small patties roughly the size of your slider buns. Press a slight indentation in the center of each patty.
  3. In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, hot sauce, garlic powder, smoked paprika, and lemon juice. Taste and adjust seasoning, adding a pinch of sugar if desired. Cover and refrigerate until ready to serve.
  4. Slice the tomato thinly and wash the lettuce or spinach leaves. Set out blue cheese crumbles and pickle slices.
  5. Heat grill or skillet over medium-high heat and lightly oil the grates or pan.
  6. Cook patties for about 2.5-3 minutes per side, flipping once, until a nice brown crust forms and internal temperature reaches 160°F (71°C). Press gently for a good sear but do not squish patties.
  7. While patties cook, slice buns and toast cut sides lightly on the grill or pan until golden and warm.
  8. Spread a generous dollop of secret sauce on both halves of each bun. Layer lettuce, cooked patty, blue cheese crumbles, a tomato slice, and a pickle slice. Cap with the top bun and gently press to hold together.
  9. Serve immediately, arranging sliders on a platter. Let patties rest for a minute after cooking to lock in juices.

Notes

Do not overwork the meat to keep sliders tender. Press a dimple in the center of patties to prevent puffing. Toast buns to add crunch and prevent sogginess. Secret sauce can be made ahead and stored refrigerated up to a week. Let patties rest after cooking to lock in juices.
