Ingredients

Scale
  • 4 skin-on, center-cut salmon fillets (6 oz / 170 g each)
  • 2 large cedar planks (approx. 12 x 7 inches), soaked in water for at least 1 hour
  • 1/3 cup (80 ml) pure maple syrup
  • 2 tablespoons (30 ml) bourbon whiskey
  • 1 tablespoon (15 g) Dijon mustard
  • 2 tablespoons (25 g) brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) apple cider vinegar
  • 1/4 teaspoon ground cayenne pepper (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon (15 ml) olive oil

Instructions

  1. Soak the cedar planks in water for at least 1 hour to prevent burning.
  2. In a medium bowl, whisk together maple syrup, bourbon, Dijon mustard, brown sugar, minced garlic, apple cider vinegar, and cayenne pepper. Adjust seasoning to taste and set aside.
  3. Preheat the grill to medium heat (about 350°F / 175°C). Clean and oil the grates.
  4. Pat salmon fillets dry with paper towels. Lightly brush both sides with olive oil and season with salt and freshly ground black pepper.
  5. Remove cedar planks from water and pat dry. Place planks on grill grates to preheat for about 2 minutes until they start to smoke lightly.
  6. Lay salmon skin-side down on the cedar planks.
  7. Close the grill lid and cook for 15 minutes. After 10 minutes, gently brush the salmon with the maple bourbon glaze. Repeat glazing once more after 12 minutes. Watch for flare-ups and move the plank if needed.
  8. Check for doneness: salmon should be opaque and flake easily, with an internal temperature of 125°F (52°C) for medium-rare.
  9. Remove the cedar plank with salmon from the grill and let rest for 5 minutes before serving.

Notes

Soak cedar planks for at least 1 hour to prevent burning. Apply glaze in layers during the last few minutes of cooking to avoid burning. Use an instant-read thermometer to check doneness. Keep grill lid closed as much as possible to trap smoke. If glaze burns, lower heat or move plank to indirect heat. Oven broiling on soaked cedar planks is an alternative method.
