Velvety, creamy deviled eggs with a spicy jalapeño kick, sharp cheddar, and smoky bacon, perfect for tailgate parties and crowd-pleasing snacks.

  • 6 large eggs, hard-boiled and peeled (about 12 halves)
  • 4 oz (115 g) cream cheese, softened
  • ½ cup (50 g) sharp cheddar cheese, shredded
  • 1 medium jalapeño pepper, finely diced (seeds removed for milder heat)
  • 3 slices bacon, cooked crisp and crumbled
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • Smoked paprika for garnish (optional)

Instructions

  1. Place 6 large eggs in a single layer in a medium saucepan. Cover with cold water by about an inch (2.5 cm). Bring water to a rolling boil over medium-high heat, then cover the pan, turn off the heat, and let eggs sit for 12 minutes.
  2. Transfer eggs to a bowl of ice water and chill for 10 minutes to stop cooking and make peeling easier.
  3. Gently tap each egg on a hard surface to crack the shell, then peel under running cold water or submerged in the ice bath.
  4. Slice each egg lengthwise with a sharp knife. Carefully remove yolks and place them in a mixing bowl. Arrange egg whites on a serving plate.
  5. Mash the yolks with a fork until crumbly. Add softened cream cheese and mayonnaise. Mix until smooth and creamy with no lumps.
  6. Stir in shredded sharp cheddar, finely diced jalapeño, crumbled bacon, Dijon mustard, garlic powder, salt, and pepper to taste.
  7. If the filling is too stiff, add mayonnaise one teaspoon at a time until desired creaminess is reached.
  8. Using a piping bag fitted with a star tip or a small spoon, fill the egg white halves with the yolk mixture, creating a fluffy mound.
  9. Sprinkle smoked paprika over the filled eggs and optionally garnish with a jalapeño slice or extra bacon bits.
  10. Refrigerate for at least 30 minutes before serving to let flavors meld and filling firm up.

Notes

Peel eggs under running water or in an ice bath for easier shell removal. Adjust jalapeño heat by removing seeds and ribs or adding more peppers. Mix filling by hand to preserve texture. Serve chilled for best flavor and texture. Can substitute Greek yogurt for mayonnaise or pepper jack cheese for cheddar. For vegetarian, omit bacon and add roasted red peppers or sun-dried tomatoes.
