  • 1 medium seedless watermelon, cut into 8 large wedges (about inches thick)
  • 1 cup crumbled feta cheese
  • 1 teaspoon chili flakes (adjust to taste)
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 lime
  • 2 tablespoons chopped fresh mint or basil (optional)
  • 1 teaspoon honey or agave syrup (optional)
  • Sea salt to taste

Instructions

  1. Cut the seedless watermelon into 8 large wedges, about 1½ inches thick. Pat the wedges dry with a paper towel to remove excess moisture.
  2. Preheat your grill to medium-high heat, around 400°F (200°C). If using a grill pan, preheat it over medium-high heat for about 5 minutes.
  3. Lightly brush both sides of each watermelon wedge with extra virgin olive oil to prevent sticking and help caramelize the sugars.
  4. Place the watermelon wedges on the grill and cook for about 2–3 minutes per side until grill marks appear and the wedges are slightly caramelized. Avoid overcooking to prevent mushiness.
  5. While the watermelon grills, combine crumbled feta, chili flakes, fresh lime juice, honey (if using), and chopped mint or basil in a mixing bowl. Mix gently but thoroughly.
  6. Arrange the grilled watermelon wedges on a serving platter. Spoon the chili feta mixture generously over the top, sprinkle with sea salt, and garnish with extra fresh herbs if desired.
  7. For an added zing, squeeze a little extra lime juice over everything just before serving.
