  • 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/4 cup honey (85 grams)
  • 3 tablespoons sriracha sauce
  • 2 tablespoons soy sauce (low-sodium recommended)
  • 3 cloves garlic, minced
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika (optional)
  • 1/2 teaspoon freshly ground black pepper
  • Wooden or metal skewers (soaked in water for 30 minutes if wooden)

Instructions

  1. Rinse and pat dry the chicken thighs, then cut into 1-inch cubes.
  2. In a medium bowl, whisk together honey, sriracha, soy sauce, minced garlic, lime juice, olive oil, smoked paprika, and black pepper until well combined.
  3. Add the chicken cubes to the bowl and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, ideally 1 to 2 hours.
  4. If using wooden skewers, soak them in water for 30 minutes before threading the chicken.
  5. Remove the chicken from the marinade (reserve leftover marinade for basting). Thread the pieces onto the skewers, leaving space between each piece.
  6. Preheat the grill to medium-high heat (about 400°F / 204°C).
  7. Place skewers on the grill grates and cook for about 5-6 minutes per side (total 12-14 minutes), brushing occasionally with reserved marinade. Move skewers to indirect heat if flare-ups occur.
  8. Check for doneness: chicken should reach an internal temperature of 165°F (74°C) and juices run clear.
  9. Let the skewers rest for 5 minutes off the heat before serving.

Notes

Marinate for at least 30 minutes for best flavor; up to 2 hours is ideal. Avoid marinating overnight to prevent honey from ‘cooking’ the chicken. Soak wooden skewers to prevent burning. Use medium-high heat to avoid burning the glaze. Baste with reserved marinade but do not use marinade that touched raw chicken for dipping. Let skewers rest after grilling to lock in juices.
