A deliciously smoky and zesty grilled corn recipe featuring a creamy chili lime butter that brings bold Mexican street flavors to your backyard gatherings.

Ingredients

Scale
  • 4 ears fresh corn on the cob, husks removed
  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 tablespoons mayonnaise
  • 1/2 cup cotija cheese, crumbled
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Prepare the Chili Lime Butter: In a mixing bowl, combine softened butter, fresh lime juice, chili powder, smoked paprika, garlic powder, salt, and mayonnaise. Mix thoroughly until smooth and evenly blended.
  2. Preheat Your Grill: Heat grill to medium-high (around 375°F / 190°C). For charcoal grills, wait until coals are glowing red with a light layer of ash.
  3. Grill the Corn: Place husk-removed corn directly on grill grates. Grill for 10-12 minutes, turning every 2-3 minutes to get even char marks. Kernels should be tender and slightly blackened.
  4. Apply the Chili Lime Butter: Remove corn from grill and immediately brush generously with the prepared chili lime butter.
  5. Add the Cheese and Garnish: While butter is still warm, sprinkle crumbled cotija cheese over the corn, pressing slightly to stick. Finish with chopped cilantro if desired.
  6. Serve Warm: Enjoy hot off the grill. Can be kept warm wrapped in foil for up to 15 minutes.

Notes

For a dairy-free version, substitute butter with vegan margarine, mayonnaise with plant-based alternative, and cotija cheese with nutritional yeast or vegan cheese. If no grill is available, use a grill pan or broiler, watching closely to avoid burning. Turn corn frequently for even cooking and char.
