  • 2 tablespoons fresh dill, finely chopped
  • Zest of 1 lemon
  • 2 tablespoons capers, drained and chopped (optional)
  • ¼ small red onion, thinly sliced
  • 2 tablespoons everything bagel seasoning
  • Freshly ground black pepper, to taste
  • Fresh chives, finely chopped, for garnish (optional)

Instructions

  1. Slice each everything bagel horizontally into thin layers about ½ inch thick using a sharp knife.
  2. Gently flatten each bagel slice with a rolling pin or your hand until about ¼ inch thick to make rolling easier.
  3. In a mixing bowl, combine softened cream cheese, chopped dill, lemon zest, and freshly ground black pepper. Mix until smooth and creamy.
  4. Lay each flattened bagel slice on plastic wrap or parchment paper. Spread about 2 tablespoons of the cream cheese mixture evenly over each slice, leaving a small border around the edges.
  5. Arrange thin slices of smoked salmon evenly over the cream cheese layer.
  6. Sprinkle chopped capers and thin red onion slices over the salmon.
  7. Using the plastic wrap or parchment paper to help, roll up each bagel slice tightly into a log shape. Wrap tightly in plastic wrap and refrigerate for at least 30 minutes to firm up.
  8. Once chilled, unwrap each roll and slice into 1-inch thick pinwheels using a sharp serrated knife.
  9. Arrange pinwheels on a serving platter and garnish with chopped fresh chives and additional everything bagel seasoning if desired.

Notes

If bagels are not fresh and soft, wrap slices in a damp paper towel and microwave for 10 seconds before flattening to make them more pliable. Chill rolls well before slicing to ensure clean cuts and neat pinwheels. Use a serrated knife for slicing to avoid squashing the filling.
