  • 4 cups pickling cucumbers, thinly sliced (preferably Kirby cucumbers)
  • 1 medium yellow onion, thinly sliced
  • 1 cup granulated sugar
  • 1 cup white vinegar (can substitute apple cider vinegar)
  • 1 cup water
  • 1 teaspoon turmeric powder
  • 1 teaspoon celery seed
  • 1 tablespoon mustard seeds
  • ½ teaspoon ground ginger (optional)
  • 2 teaspoons pickling salt or kosher salt

Instructions

  1. Slice the cucumbers and onions thinly, about 1/8-inch thickness.
  2. Place sliced cucumbers and onions in a large bowl and sprinkle with 2 teaspoons of salt. Toss gently and let sit for 1-2 hours, stirring once or twice.
  3. Combine vinegar, water, sugar, turmeric, celery seed, mustard seeds, ground ginger (if using), and a pinch of salt in a medium saucepan. Heat over medium until sugar dissolves and liquid simmers (about 5-7 minutes). Remove from heat.
  4. Drain the cucumbers and onions in a colander and rinse under cold water to remove excess salt. Pat dry with a towel.
  5. Return the drained vegetables to the bowl and pour the hot pickling liquid over them. Stir gently to coat evenly. Let cool to room temperature.
  6. Pack the mixture tightly into sterilized glass jars, pressing down to remove air pockets.
  7. Seal the jars with lids and refrigerate. Allow pickles to develop flavor for at least 24 hours, best after 3 days. Store in the refrigerator for up to 3 weeks.

Notes

Use firm, small-curd cucumbers like Kirby for best crunch. Avoid pre-mixed curry powders for turmeric to prevent overpowering flavor. Adjust sugar to taste or substitute with coconut sugar for a richer flavor. Let pickles sit refrigerated for at least 3 days for best flavor. Can be made shelf-stable with proper canning methods.
