A quick and easy recipe for sweet and tangy bread and butter pickle chips with a perfect balance of sugar, vinegar, and spices. These crunchy pickle chips are perfect for snacking, garnishing sandwiches, or adding a pop of flavor to salads.

  • 4 medium Kirby cucumbers, thinly sliced (about 1/8 inch thick)
  • 1 medium yellow onion, thinly sliced
  • 1 ½ cups granulated sugar
  • 1 ½ cups white vinegar
  • 1 ½ cups water
  • 1 tablespoon pickling salt or kosher salt
  • 1 tablespoon mustard seeds
  • 1 teaspoon celery seeds
  • ½ teaspoon turmeric powder
  • ¼ teaspoon ground cloves (optional)
  • ¼ teaspoon ground cinnamon (optional)

Instructions

  1. Slice the cucumbers and onions into thin, uniform chips about 1/8 inch (3 mm) thick using a sharp knife or mandoline slicer.
  2. Place the sliced cucumbers and onions in a large bowl. Sprinkle the salt evenly over them and toss gently to combine. Let sit for 1 hour to draw out excess moisture.
  3. Drain the liquid through a colander and rinse the slices briefly under cold water. Drain thoroughly.
  4. In a large saucepan, combine sugar, white vinegar, water, mustard seeds, celery seeds, turmeric, cloves, and cinnamon. Stir to mix.
  5. Bring the mixture to a boil over medium-high heat, stirring occasionally to dissolve the sugar completely.
  6. Reduce heat and simmer gently for 2-3 minutes to bloom the spices.
  7. Pour the hot brine over the drained cucumber and onion slices in the bowl. Stir gently to coat evenly, ensuring slices are submerged.
  8. Let the mixture cool to room temperature, then transfer pickles and liquid into clean glass jars or airtight containers. Seal tightly and refrigerate.
  9. Let the pickles sit refrigerated for at least 24 hours before tasting. For best flavor, wait 2-3 days.

Use Kirby cucumbers for best crunch. Salt and drain cucumbers properly to avoid sogginess. Rinse after salting to prevent excess saltiness. Let pickles rest at least 24 hours for best flavor. Optional spices cloves and cinnamon add warmth and complexity. For a spicy twist, add jalapeños or red pepper flakes. Use apple cider vinegar for a milder tang.
