A quick and satisfying smash burger recipe featuring crispy edges, juicy centers, sweet caramelized onions, and a tangy secret sauce, perfect for casual gatherings or weeknight dinners.

  • 2 medium yellow onions, thinly sliced
  • 4 slices cheddar cheese
  • 4 hamburger buns (preferably brioche or potato)
  • 2 tablespoons unsalted butter
  • Salt and freshly ground black pepper, to taste
  • Secret sauce:
  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Optional toppings: pickles, lettuce, tomato slices

Instructions

  1. Prepare the caramelized onions: Heat 1 tablespoon of butter in a skillet over medium-low heat. Add the thinly sliced onions with a pinch of salt, stirring occasionally. Cook slowly for 25-30 minutes until deep golden brown and soft.
  2. Make the secret sauce: In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, Worcestershire sauce, garlic powder, and smoked paprika. Refrigerate while cooking burgers.
  3. Preheat your Blackstone griddle to medium-high heat (around 375°F).
  4. Divide the ground beef into 4 equal portions (about 4 ounces each). Handle the meat minimally.
  5. Place each ball on the hot griddle and smash down firmly with a spatula until about 1/4 inch thick.
  6. Season each patty immediately with salt and freshly ground black pepper.
  7. Cook the first side undisturbed for 2-3 minutes until edges are dark golden and crisp.
  8. Flip each patty and place a slice of cheddar cheese on top. Cook for another 1-2 minutes until cheese melts and burger is cooked through but juicy.
  9. Toast the buns: Spread butter on cut sides and toast on the griddle until golden brown.
  10. Assemble the burger: Spread secret sauce on both bun halves, add the patty with melted cheese, top with caramelized onions and optional toppings.
  11. Serve immediately while hot for the best juicy-crispy combination.

Notes

Do not press down on patties after flipping to retain juiciness. Let patties cook long enough before flipping to avoid sticking. Slow caramelization of onions is key for sweetness. Toast buns to prevent sogginess. Can substitute ground turkey or chicken for leaner option and gluten-free buns or lettuce wraps for gluten-free diet.
