  • 1 quart lime sherbet (such as Breyers)
  • 2 cups pineapple juice (100% juice, like Dole)
  • 12 pounds dry ice

Instructions

  1. Chill your ingredients: About an hour before serving, put the lemon-lime soda and pineapple juice in the refrigerator to get very cold.
  2. Soften the sherbet: Take the lime sherbet out of the freezer about 10 minutes before you start. It should be soft enough to scoop easily but not melted.
  3. Prepare the dry ice: Put on gloves or use tongs. If the dry ice is in one large block, wrap it in a clean kitchen towel and gently tap with a hammer to break into golf ball-sized pieces. Set aside in a bowl. Do not store in an airtight container.
  4. Mix the base: Pour the chilled pineapple juice into a large punch bowl. Slowly pour in the lemon-lime soda down the side of the bowl to preserve carbonation. Stir gently with a ladle.
  5. Add the sherbet: Using an ice cream scoop, drop 6-8 large scoops of lime sherbet into the punch. Do not stir—let it float on top to create a creamy, frothy layer.
