Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang on two opposite sides. Lightly spray with non-stick spray.
  2. Make the shortbread crust: In a food processor, pulse flour, powdered sugar, and salt until combined. Add cold cubed butter and pulse until mixture resembles coarse sand with a few pea-sized butter pieces. Press firmly into the bottom of the prepared pan. Add granulated sugar and beat another minute. Add eggs one at a time, beating on low just until combined. Add vanilla extract and sour cream, mix on low until smooth.
  5. Assemble the bars: Pour cheesecake filling over cooled apple layer. Use an offset spatula to spread evenly. Tap pan gently on counter to release air bubbles.
