These easy turkey and cheese lunchbox pinwheels are a quick, kid-friendly lunch solution made with flour tortillas, cream cheese, deli turkey, and cheese. Ready in under 10 minutes, they hold up beautifully in lunchboxes and are perfect for busy mornings.

Ingredients

Scale
  • 4 large flour tortillas (10-inch)
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 810 slices deli turkey breast
  • 46 slices provolone or cheddar cheese
  • Salt and black pepper to taste
  • Optional: 1/4 cup finely shredded lettuce or spinach

Instructions

  1. Soften the cream cheese: Let it sit at room temperature for 20 minutes or microwave on low for 10-15 seconds until soft but not melted.
  2. Mix the spread: In a small bowl, combine softened cream cheese with garlic powder, onion powder, and a pinch of salt and pepper. Stir until evenly mixed.
  3. Prepare tortillas: Lay one tortilla flat on a cutting board. If cold, microwave for 10 seconds between damp paper towels to make pliable.
  4. Spread cream cheese: Using a spatula or butter knife, spread a thin, even layer of the cream cheese mixture over the entire surface of the tortilla, going all the way to the edges.
  5. Layer turkey: Place 2-3 slices of turkey over the cream cheese, overlapping slightly, leaving a half-inch border at the far edge.
  6. Add cheese: Lay 1-2 slices of cheese over the turkey. If using lettuce or spinach, sprinkle it over the cheese now.
  7. Roll tight: Starting from the edge closest to you, roll the tortilla away from you, keeping it tight but not so tight that filling squishes out. Press gently to seal the end.
  8. Wrap and chill: Wrap the rolled tortilla tightly in plastic wrap or parchment paper. Refrigerate for at least 30 minutes (optional but recommended for cleaner slicing).
  9. Slice into pinwheels: Unwrap the chilled roll and slice into 1-inch thick rounds using a sharp serrated knife with a gentle sawing motion. You should get about 6-8 pinwheels per tortilla.
  10. Pack and serve: Arrange pinwheels in a lunch container. If packing for later, include a small ice pack. Best eaten within 4-6 hours.

Notes

Pat turkey dry with paper towels to prevent sogginess. Use room temperature ingredients for best results. Chilling before slicing is crucial for clean cuts. Store in refrigerator for up to 2 days. Freeze uncut rolls for up to 1 month.
