Easy Slow Cooker Queso Dip: The Best Game Day Recipe

This slow cooker queso dip is the kind of recipe that makes you look like you planned ahead, even if you threw it together ten minutes before kickoff. It’s the appetizer that disappears first—every single time I bring it to a gathering, someone asks for the recipe before halftime.

  • 1 pound (16 oz) block of Velveeta, cut into 1-inch cubes
  • 1 can (10 oz) Rotel diced tomatoes and green chilies, undrained
  • 8 oz (1 block) cream cheese, softened and cut into cubes
  • 1 cup (8 oz) whole milk
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt to taste
  • Optional add-ins: ½ cup cooked and crumbled chorizo, ½ cup cooked ground beef, 1 diced jalapeño (seeds removed), or ¼ cup chopped fresh cilantro for garnish

Instructions

  1. Prep your ingredients. Start by cubing your Velveeta and cream cheese. Cut the Velveeta into roughly 1-inch cubes. For the cream cheese, make sure it has softened at room temperature for about 30 minutes, then cut it into similar-sized cubes.
  2. Layer everything in the slow cooker. Add the cubed Velveeta to the bottom of the slow cooker. Top it with the cubed cream cheese. Pour the undrained can of Rotel over the top. Sprinkle in the ground cumin, garlic powder, onion powder, and smoked paprika. Finally, pour the cup of whole milk over everything. Don’t stir yet.
  3. Cook on low for 1.5 to 2 hours. Set your slow cooker to the low setting. Cover it with the lid and let it cook undisturbed for about 90 minutes.
  4. Stir until smooth. After 1.5 hours, remove the lid and give everything a good stir with your wooden spoon or silicone spatula. Stir until the dip is completely smooth and uniform in color.
  5. Taste and adjust seasoning. Dip a clean chip in and taste it. Add a pinch of salt, more cumin, or black pepper as needed.
  6. Add any optional mix-ins. If you are adding cooked chorizo, ground beef, or diced jalapeño, stir them in now. Let the dip cook for another 15 to 20 minutes on low.
  7. Serve warm. Turn the slow cooker to the warm setting. Serve the queso directly from the slow cooker with tortilla chips, sliced bell peppers, or warm soft pretzels.

Notes

Low and slow is non-negotiable. Cube the cheese the same size. Don’t skip the cream cheese. If your dip gets too thick, stir in a splash of milk. If your dip gets too thin, let it cook uncovered on low for another 15 to 20 minutes. Keep it warm, not hot. Let your milk come to room temperature before adding it.
