  • 2 lbs (about 900g) boneless, skinless chicken thighs
  • 1/2 cup (170g) honey
  • 1/2 cup (120ml) low-sodium soy sauce
  • 45 cloves garlic, minced
  • Optional: 2 tablespoons cornstarch + 2 tablespoons cold water (for slurry)

Instructions

  1. Prep the Chicken (5 minutes): Place your boneless, skinless chicken thighs on a cutting board. Pat them dry with paper towels. Trim off any large pieces of excess fat. Season both sides lightly with a pinch of salt and pepper.
  2. Mix the Sauce (2 minutes): In a small bowl or liquid measuring cup, whisk together the 1/2 cup of honey and 1/2 cup of low-sodium soy sauce. Stir in the 4-5 minced garlic cloves.
  3. Assemble in the Slow Cooker (2 minutes): Place the seasoned chicken thighs in the bottom of your slow cooker. Try to arrange them in a single layer. Pour the honey garlic sauce evenly over the top of the chicken.
  4. Cook Low and Slow (4-6 hours on LOW or 2-3 hours on HIGH): Put the lid on and set your slow cooker to LOW for 4-6 hours. If you’re in a hurry, you can cook on HIGH for 2-3 hours. About halfway through, you can spoon some of the sauce over the tops of the chicken to keep them moist.
  5. Thicken the Sauce (Optional, 30 minutes before serving): About 30 minutes before you’re ready to eat, check the chicken. It should be fork-tender. Use tongs to carefully remove the chicken to a plate. If the sauce is still thin, whisk together 2 tablespoons of cornstarch with 2 tablespoons of cold water until smooth. Notes

Don’t peek! Every time you lift the lid, you let out heat and steam, which adds 15-20 minutes to your cooking time. Resist the urge to stir or check it more than once or twice. If you like a little heat, you can add a pinch of red pepper flakes or a squirt of sriracha. Leftovers are even better the next day and freeze beautifully.
