Tender, juicy buffalo chicken cooked low and slow in a tangy sauce, piled onto buttery toasted buns with melty provolone cheese. The ultimate crowd-pleasing party appetizer that’s incredibly easy to make.

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup buffalo wing sauce (such as Frank’s RedHot)
  • 4 tablespoons unsalted butter, melted
  • 1 packet (about 1 ounce) ranch seasoning mix
  • 1216 slider buns (Hawaiian sweet rolls recommended)
  • 8 slices provolone cheese
  • Blue cheese crumbles (optional, for serving)
  • Ranch or blue cheese dressing (for serving)

Instructions

  1. Place the chicken breasts in the bottom of a 4-6 quart slow cooker. Pour the buffalo wing sauce over the top, ensuring each piece is coated. Sprinkle half of the ranch seasoning packet over the chicken.
  2. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken is tender and reaches an internal temperature of 165°F.
  3. Carefully remove the chicken and shred it using two forks or a hand mixer on low speed. Return the shredded chicken to the slow cooker with the cooking liquid.
  4. Stir in the melted butter and let the chicken sit on warm for about 10 minutes to absorb the sauce. Taste and adjust seasoning if desired.
  5. While the chicken rests, preheat the oven’s broiler or heat a dry skillet over medium heat. Slice the slider buns in half horizontally. Place them cut-side up on a baking sheet or in the skillet and broil for 1-2 minutes until golden brown.
  6. In a small bowl, melt the remaining 2 tablespoons of butter and stir in the rest of the ranch seasoning. Brush this mixture onto the toasted cut sides of the buns.
  7. Place the bottom halves of the buns on a serving platter. Using a slotted spoon, pile the buffalo chicken onto the buns. Top with slices of provolone cheese. If desired, broil for 30 seconds to melt the cheese.
  8. Place the top buns on the sliders. Serve immediately, sprinkled with blue cheese crumbles if using, and with ranch or blue cheese dressing on the side for dipping.

Notes

Toast the buns to prevent sogginess. Use a slotted spoon to drain excess sauce when assembling. Let the chicken rest in the sauce for 10-15 minutes after shredding for best flavor. The recipe can be doubled for a crowd.
