Easy Sheet-Pan BBQ Chicken Thighs with Charred Corn

Juicy, tender BBQ chicken thighs and sweet, smoky charred corn all roasted on a single sheet pan for an easy, flavor-packed weeknight dinner with minimal cleanup.

  • 68 bone-in, skin-on chicken thighs (about 2.5 lbs)
  • 1 cup BBQ sauce, divided
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • 4 ears fresh corn on the cob, husked and cleaned
  • 2 tablespoons butter, melted
  • ½ teaspoon chili powder
  • Optional garnishes: crumbled cotija cheese, fresh cilantro, lime juice, Tajín

Instructions

  1. Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or foil.
  2. In a large bowl, whisk together ½ cup BBQ sauce, olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Add chicken thighs and toss to coat. Let sit at room temperature for 10-15 minutes.
  3. In a small bowl, whisk together melted butter, chili powder, salt, and pepper. Brush mixture all over the husked ears of corn.
  4. Arrange marinated chicken thighs skin-side up on the prepared baking sheet, leaving space between them. Place buttered corn ears in empty spaces on the pan.
  5. Roast for 25 minutes.
  6. Remove pan from oven. Brush remaining ½ cup BBQ sauce over chicken thighs. Turn corn ears with tongs to ensure even charring.
  7. Return to oven and roast for another 15-20 minutes, until chicken reaches 165°F (74°C) internally and corn is tender with charred spots.
  8. Let chicken rest on the pan for 5-10 minutes before serving. Cut corn off the cob if desired, and serve with garnishes.

Notes

For best results, use bone-in, skin-on chicken thighs. Let chicken rest before cutting to keep juices in. Pat corn dry before buttering to ensure charring. Line pan for easy cleanup. Marinate chicken up to 24 hours ahead for more flavor.
