  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (freshly grated if possible)
  • 1/4 teaspoon salt
  • 1/2 cup salted caramel sauce (store-bought or homemade), divided
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • For the Quick Salted Caramel Sauce (optional but recommended):
  • 1/2 cup granulated sugar
  • 3 tablespoons unsalted butter, cut into pieces
  • 1/4 cup heavy cream
  • 1/2 teaspoon flaky sea salt (or more to taste)

Instructions

  1. Preheat your oven to 350°F (175°C). Place a rack in the center of the oven.
  2. Prepare the apples: Peel, core, and slice your apples into about 1/4-inch thick slices. Place in a large bowl and toss with lemon juice to coat.
  3. Cook the apple filling: In a large skillet or saucepan over medium heat, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and salt. Stir to coat. Cook for about 5-7 minutes, stirring occasionally, until the apples start to soften and release their juices. Remove from heat and stir in 1/4 cup of the salted caramel sauce. Set aside.
  4. Make the oat crumble: In a medium bowl, whisk together the oats, flour, brown sugar, cinnamon, and salt. Add the cold, cubed butter. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining. Do not overmix.
  5. Assemble the crisp: Pour the cooked apple mixture into a greased 8×8-inch baking dish. Spread into an even layer. Sprinkle the oat crumble evenly over the top. Do not press it down.
  6. Bake: Place the dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly around the edges. If the topping is browning too quickly, tent loosely with foil for the last 10 minutes.
  7. Add the final caramel drizzle: Remove the crisp from the oven and let it cool on a wire rack for about 10 minutes. Drizzle the remaining 1/4 cup of salted caramel sauce over the top. Sprinkle with a little extra flaky sea salt if desired.
  8. Serve warm: Scoop into bowls and top with vanilla ice cream or a dollop of whipped cream.

Notes

For best results, use cold butter for the crumble and do not skip cooking the apples first. Let the crisp rest for at least 10 minutes after baking to allow the filling to set. For a gluten-free version, use a gluten-free 1:1 baking blend and certified gluten-free oats. For a dairy-free version, use vegan butter and dairy-free caramel sauce.
