Easy Pumpkin Dump Cake with Crunchy Pecan Streusel

A simple yet deeply delicious fall dessert featuring a soft, pudding-like pumpkin base and a crunchy, buttery pecan streusel topping. This dump cake comes together in minutes with minimal effort and maximum flavor.

  • 1 can (15 oz / 425g) pumpkin puree (not pumpkin pie filling)
  • 1 can (12 oz / 354ml) evaporated milk
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 box (15.25 oz / 432g) yellow cake mix (dry, not prepared)
  • 1 cup (113g) chopped pecans
  • 3/4 cup (170g / 1.5 sticks) unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a medium mixing bowl, whisk together the pumpkin puree, evaporated milk, granulated sugar, eggs, pumpkin pie spice, vanilla extract, and salt until completely smooth and uniform.
  3. Pour the pumpkin mixture into the prepared baking dish and spread it evenly across the bottom with a spatula.
  4. Sprinkle the entire box of dry yellow cake mix evenly over the pumpkin mixture. Do not stir it in.
  5. Sprinkle the chopped pecans evenly over the dry cake mix. Do not mix.
  6. Drizzle the melted butter evenly over the entire surface, covering as much of the dry cake mix as possible.
  7. Bake for 45 to 50 minutes, or until the top is golden brown and the edges are bubbly. The center should be set but still slightly jiggly.
  8. Let the cake cool on a wire rack for at least 15 to 20 minutes before serving to allow the layers to set properly.

Notes

Do not overbake; the top should be golden and crunchy while the pumpkin layer stays soft and pudding-like. If edges darken too quickly, tent loosely with foil for the last 10 minutes. Let the cake rest for 20 minutes before serving to allow the pumpkin layer to set. The cake can be made ahead and actually tastes better after a few hours as flavors meld.
