Ingredients

Scale
  • 2 cups (340g) semi-sweet chocolate chips
  • 1 can (14 oz / 397g) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups (340g) white chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening
  • 1 teaspoon peppermint extract
  • ½ cup (85g) semi-sweet chocolate chips (for fudge swirl)
  • 1 tablespoon heavy cream
  • ½ cup (about 45 candy canes) crushed candy canes or peppermint candies
  • Optional: ¼ cup white chocolate chips for drizzling

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides. Lightly spray with non-stick cooking spray if desired.
  2. In a medium microwave-safe bowl, combine 2 cups semi-sweet chocolate chips and the entire can of sweetened condensed milk. Microwave in 30-second intervals, stirring well after each, until smooth and glossy (about 1½ to 2 minutes). Stir in vanilla extract and salt.
  3. Pour the fudge base into the prepared pan and spread evenly. Refrigerate for about 10 minutes until set but not rock hard.
  4. In another medium microwave-safe bowl, combine white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each, until smooth. Stir in peppermint extract. Set aside.
  5. In a small microwave-safe bowl, combine ½ cup semi-sweet chocolate chips with heavy cream. Microwave in 15-second intervals, stirring after each, until smooth and slightly runny.
  6. Remove the pan from the fridge. Pour the white chocolate mixture over the fudge base and spread evenly.
  7. Dollop the fudge swirl mixture in small spoonfuls across the white chocolate layer (about 8-10 dollops). Use a small knife or skewer to create swirls with a figure-eight or zigzag pattern. Do not over-swirl.
  8. Sprinkle crushed candy canes evenly over the top and press gently to adhere. If using optional white chocolate drizzle, wait until after chilling.
  9. Refrigerate for at least 2 hours (or freeze for 45 minutes to 1 hour) until completely firm.
  10. Use the parchment sling to lift the bark out of the pan. Let sit at room temperature for 5 minutes before cutting into pieces with a sharp knife.

Notes

Store in an airtight container in the refrigerator for up to 2 weeks. Freeze for up to 3 months. Let bark sit at room temperature for 5-10 minutes before cutting to prevent cracking. For best results, use room temperature ingredients and do not overheat chocolate.
