  • 1.5 pounds boneless, skinless chicken breasts (or thighs), cut into bite-sized pieces
  • 2 tablespoons cornstarch
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons avocado oil (or neutral oil with high smoke point)
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (optional)
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon water
  • 3 cups broccoli florets (about 1 large head)
  • 1 tablespoon avocado oil
  • Pinch of salt
  • Sesame seeds for garnish (optional)
  • Sliced green onions for garnish (optional)

Instructions

  1. Prep your ingredients first. Cut chicken into 1-inch pieces and pat dry with paper towels. In a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, sesame oil, red pepper flakes, and water. Set aside.
  2. Place chicken pieces in a bowl, add cornstarch, salt, and pepper. Toss until each piece is lightly coated.
  3. Heat a large skillet (12-inch) over medium-high heat. Add 2 tablespoons avocado oil and let it get hot until shimmering. Add chicken in a single layer (work in batches if needed). Cook undisturbed for 3-4 minutes until golden brown, then flip and cook another 3-4 minutes until cooked through. Transfer to a plate.
  4. In the same pan, add 1 tablespoon avocado oil over medium-high heat. Add broccoli florets and a pinch of salt. Cook for 3-4 minutes, stirring occasionally, until bright green with charred spots.
  5. Return cooked chicken to the pan with broccoli. Pour sauce over everything and stir well. Cook for 1-2 minutes until sauce thickens and becomes glossy.
  6. Remove from heat. Sprinkle with sesame seeds and sliced green onions if desired. Serve immediately over steamed rice, quinoa, or noodles.

Notes

Don’t skip drying the chicken for a good sear. Add garlic to the sauce rather than sautéing to prevent burning. Use low-sodium soy sauce to control saltiness. Let sauce bubble to thicken properly. Fresh broccoli is recommended over frozen for best texture. Sauce thickens more as it cools.
