Easy No-Bake Red White and Blue Icebox Cake

A quick and festive no-bake dessert featuring layers of whipped cream, fresh strawberries, blueberries, and graham crackers, perfect for summer celebrations.

  • 1 package graham crackers or vanilla wafer cookies (about 12 oz / 340 g)
  • 2 cups heavy whipping cream (480 ml), chilled
  • 1/4 cup powdered sugar (30 g)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, hulled and sliced (about 225 g)
  • 1 cup fresh blueberries (about 150 g)
  • Optional: Fresh mint leaves for garnish
  • Optional: Additional berries to decorate the top

Instructions

  1. Chill your mixing bowl and beaters in the fridge for 10-15 minutes before whipping cream.
  2. Pour 2 cups of chilled heavy whipping cream into the cold bowl. Add 1/4 cup powdered sugar and 1 teaspoon vanilla extract. Beat on medium-high speed until soft peaks form, about 3-5 minutes. Be careful not to overbeat.
  3. Hull and slice the strawberries and rinse blueberries. Pat dry to avoid excess moisture.
  4. Spread a thin layer of whipped cream on the bottom of an 8×8 inch baking dish.
  5. Create a layer of graham crackers covering the cream completely, breaking pieces to fit if needed.
  6. Spread about a third of the whipped cream evenly over the cookies.
  7. Scatter a mix of sliced strawberries and blueberries evenly over the cream layer. Press lightly but do not mash the berries.
  8. Repeat layers: graham crackers, whipped cream, and fruit. Finish with a final cracker layer topped with whipped cream and a few whole berries for decoration.
  9. Wrap the dish tightly with plastic wrap and refrigerate for at least 4 hours, ideally overnight.
  10. Slice into squares and garnish with fresh mint if desired. Serve chilled.

Chill mixing bowl and beaters before whipping cream for best results. Avoid overbeating the cream to prevent graininess. Pat berries dry to avoid sogginess. Press layers gently to allow cookies to soften without becoming mushy. Overnight chilling is best for texture and flavor melding. Use a sharp knife dipped in hot water for clean slicing. Store leftovers covered in the fridge up to 3 days; avoid freezing.
