  • ¼ cup (85g) honey
  • ⅓ cup (60g) chocolate chips

  • Pinch of salt (if peanut butter is unsalted)
  • For the chocolate drizzle (optional):
  • ¼ cup (45g) dark chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Combine the dry ingredients. In a large mixing bowl, add 1 cup rolled oats, 2 tablespoons ground flaxseed, and a pinch of salt (if using). Stir with your spatula to distribute everything evenly.
  2. Add the wet ingredients. Spoon in ½ cup creamy peanut butter, ¼ cup honey, and 1 teaspoon vanilla extract. Don’t worry if it looks messy at first—that’s normal.
  3. Mix until fully combined. Stir everything together with your spatula, pressing the mixture against the sides of the bowl to break up any clumps of peanut butter. Keep going until no dry oats remain and the mixture holds together when pressed between your fingers. This usually takes about 2 minutes of consistent stirring.
  4. Fold in the chocolate chips. Add ⅓ cup chocolate chips and fold them in gently. You want them distributed evenly without crushing them.
  5. Chill the mixture (optional but helpful). If your kitchen is warm or your peanut butter was particularly runny, pop the bowl in the fridge for 15-20 minutes. This makes the mixture easier to handle and prevents sticky fingers. I skip this step most of the time, but it’s a lifesaver on humid days.
  6. Roll into balls. Using your hands (slightly damp if needed), scoop about 1 tablespoon of mixture and roll it between your palms to form a smooth ball. Place each ball on your parchment-lined baking sheet. You should get about 15-18 balls depending on size.

  8. Drizzle and set. Using a fork or a small spoon, drizzle the melted chocolate over the protein balls. You can also dip the tops for a more even coating. Place the baking sheet in the refrigerator for at least 30 minutes to let the chocolate set.
  9. Store and enjoy. Transfer the balls to an airtight container and keep them in the fridge. They’ll firm up nicely and stay fresh for up to two weeks.

Notes

If the mixture is too sticky, chill for 15-20 minutes before rolling. Wet your hands slightly to prevent sticking. For a nut-free version, use sunflower seed butter or tahini. The flavors improve after a day in the fridge.
