Quick and wholesome no-bake energy balls made with peanut butter, rolled oats, and natural sweeteners, perfect for a healthy snack anytime.

  • 1 1/2 cups (135 g) rolled oats
  • 3/4 cup (190 g) peanut butter (creamy or crunchy)
  • 1/3 cup (80 ml) honey or maple syrup
  • 2 tablespoons (14 g) ground flaxseed
  • 1 teaspoon vanilla extract
  • 1 tablespoon (12 g) chia seeds (optional)
  • 1/4 cup (40 g) mini chocolate chips or dried cranberries (optional)
  • Pinch of salt

Instructions

  1. In a medium bowl, stir together rolled oats, ground flaxseed, chia seeds, salt, and optional mix-ins like mini chocolate chips or dried cranberries.
  2. Add peanut butter, honey or maple syrup, and vanilla extract to the bowl. Stir until a sticky, cohesive dough forms. If too dry, add a teaspoon of water or more peanut butter gradually.
  3. Pinch a small amount of dough to test consistency; adjust by adding oats if too sticky or honey/peanut butter if too dry.
  4. Scoop about 1 tablespoon of dough and roll into tight balls. Place on a baking sheet or plate lined with parchment paper. Makes approximately 16-18 balls.
  5. Refrigerate for at least 30 minutes to firm up the balls.
  6. Store in an airtight container in the refrigerator for up to one week or freeze for up to 3 months.

Notes

Use natural creamy peanut butter for best binding. Adjust sweetness gradually. Chilling is essential for texture and flavor. Hands lightly dampened with water help roll sticky dough. Can substitute almond butter or sunflower seed butter for nut-free version. Freeze for longer storage.
