  • 1/2 cup natural peanut butter (130 g)
  • 1/3 cup honey (113 g)
  • 1/2 cup mini chocolate chips (90 g)
  • 1/3 cup mini M&M’s or candy-coated chocolate bits (60 g)
  • 2 tablespoons ground flaxseed (14 g)
  • 1 teaspoon vanilla extract (5 ml)
  • 1/2 teaspoon ground cinnamon (1.2 g)
  • Pinch of salt

Instructions

  1. Gather all ingredients and measure them out for easy access (about 5 minutes).
  2. In a large mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth and glossy (1-2 minutes). Warm peanut butter slightly if stiff.
  3. Add rolled oats, ground flaxseed, cinnamon, and salt. Mix thoroughly until evenly coated and sticky (about 3 minutes).
  4. Gently fold in mini chocolate chips and candy-coated chocolate bits, being careful not to overmix.
  5. Roll the mixture into 1-inch balls using hands or a small cookie scoop, yielding about 20-24 bites. Wet hands slightly if mixture is too sticky.
  6. Place bites on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  7. Transfer chilled bites to an airtight container. Store refrigerated and consume within one week.

Notes

Use almond or sunflower seed butter for nut-free version. Maple syrup or agave can replace honey for vegan option. Chilling is essential to prevent crumbling. If mixture is too loose, add extra oats or flaxseed. Avoid overmixing candy bits to prevent melting.
