  • 4 large flour tortillas (burrito size, about 10 inches)
  • 810 slices deli turkey (oven-roasted or honey turkey)
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 48 lettuce leaves (romaine or butter lettuce)
  • Salt and pepper to taste
  • Optional: avocado slices, bell pepper strips, hummus, pickle spears

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 15 minutes or microwaving for 10-15 seconds on low power.
  2. Lay one tortilla flat on a cutting board. If stiff, microwave for 10 seconds between damp paper towels.
  3. Spread a thin, even layer of cream cheese over the entire tortilla, leaving a half-inch border around the edges.
  4. Place 2-3 slices of turkey flat on top of the cream cheese, overlapping slightly for even coverage.
  5. Sprinkle a thin layer of shredded cheddar over the turkey, then place one or two lettuce leaves on top, pressing gently.
  6. Starting at one end, roll the tortilla up tightly, tucking the filling in as you go. Press the edge to seal with cream cheese.
  7. Place the rolled tortilla seam-side down on plastic wrap, wrap tightly, and twist the ends like a candy wrapper. Repeat with remaining tortillas.
  8. Refrigerate for at least 30 minutes to allow the cream cheese to set.
  9. When ready to serve, unwrap a roll-up and slice into 1-inch pinwheels using a sharp serrated knife.

Notes

Don’t skip the chilling step—it helps the roll-ups hold their shape when sliced. Pat lettuce dry to prevent sogginess. These roll-ups taste even better the next day as flavors meld. For best results, use room temperature cream cheese and warm tortillas.
