These easy make-ahead freezer breakfast burritos are a quick, filling, and delicious meal perfect for busy mornings. They combine fluffy scrambled eggs, black beans, sautéed veggies, and melty cheese wrapped in a tortilla, ready to freeze and reheat.

  • 8 large eggs, room temperature
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheddar cheese or Mexican blend
  • 1 small onion, finely chopped
  • 1 bell pepper (red or green), diced
  • ¼ cup fresh cilantro, chopped (optional)
  • 6 large flour tortillas (about 10-inch diameter)
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste
  • ¼ teaspoon cumin
  • ¼ teaspoon chili powder
  • 1 tablespoon lime juice (freshly squeezed, optional)

Instructions

  1. Dice one small onion and one bell pepper into small pieces. Chop about ¼ cup of fresh cilantro if using. Set aside.
  2. Heat 1 tablespoon olive oil or butter in a non-stick skillet over medium heat. Add the onion and bell pepper, cooking until softened and fragrant, about 5 minutes. Stir occasionally to avoid burning.
  3. In a mixing bowl, whisk 8 large eggs with a pinch of salt, pepper, ¼ teaspoon cumin, and ¼ teaspoon chili powder.
  4. Pour eggs into the skillet with veggies. Reduce heat to medium-low and cook gently, stirring frequently, until just set but still soft, about 4–5 minutes.
  5. Remove skillet from heat. Stir in 1 cup rinsed black beans and 1 cup shredded cheddar cheese. Fold in chopped cilantro and a squeeze of lime juice if desired.
  6. Warm tortillas in a dry skillet or microwave for 20 seconds until pliable.
  7. Lay a tortilla flat. Spoon about ½ cup of the egg mixture in the center, spreading lengthwise but leaving room at edges. Fold the sides in and roll tightly from one end to the other.
  8. Wrap each burrito tightly in foil or parchment paper. Place in a freezer-safe bag or container. Label with date. Freeze for up to 1 month.
  9. To reheat, unwrap and microwave on high for 1–2 minutes, flipping halfway through. For a crispier tortilla, finish with 1 minute in a hot skillet or toaster oven.

Notes

Drain black beans thoroughly and cook veggies until just tender to avoid soggy tortillas. Cook eggs gently on medium-low heat to keep them soft and creamy. Warm tortillas before rolling to prevent cracking. Wrap burritos individually to prevent sticking. Reheat in short bursts and flip for even heating. For a crispier tortilla, finish reheating in a skillet or toaster oven. Burritos can be refrigerated for 3–4 days if not frozen.
