Easy Lemon Blueberry Zucchini Muffins

  • 1 ½ cups grated zucchini (about 1 medium zucchini, squeezed to remove excess moisture)
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tbsp lemon zest (about 1 large lemon)
  • 1 cup granulated sugar (or coconut sugar)
  • ⅓ cup vegetable oil (or melted coconut oil)
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ¼ cup fresh lemon juice (about 1 large lemon)
  • 1 cup blueberries (fresh or frozen)
  • Optional: ¼ cup chopped walnuts or pecans
  • Optional: 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line muffin tin with paper liners or grease well.
  2. Grate zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, lemon zest, and optional cinnamon.
  4. In another bowl, beat eggs with sugar until smooth. Add vegetable oil, vanilla extract, and lemon juice; mix well.
  5. Pour wet ingredients into dry ingredients and gently fold until just combined.
  6. Fold in squeezed zucchini and blueberries; add nuts if using and fold gently.
  7. Fill muffin cups about ¾ full with batter.
  8. Bake for 22-26 minutes or until a toothpick inserted comes out clean or with a few moist crumbs.
  9. Cool muffins in pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. Serve warm or at room temperature, or freeze in airtight container for up to 3 months.

Notes

Squeeze excess moisture from zucchini to avoid soggy muffins. Fold batter gently to keep muffins tender. Toss blueberries in flour before folding to prevent sinking. Use frozen blueberries straight from freezer to avoid bleeding. Optionally brush tops with lemon juice and sprinkle sugar for a subtle glaze.
