This Easy Homemade Pumpkin Spice Latte Syrup is the result of years of tweaking that original recipe. It is the kind of thing you make once and then wonder why you ever bought the bottled stuff.

Ingredients

Scale
  • 1 cup (240 ml) water
  • 1 cup (200 g) granulated sugar
  • 3 tablespoons (45 g) pumpkin puree
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • A tiny pinch of salt

Instructions

  1. Combine the base ingredients: In your medium saucepan, add 1 cup of water and 1 cup of granulated sugar. Whisk them together over medium heat. The sugar should dissolve completely in about 2-3 minutes.
  2. Add the pumpkin and spices: Once the sugar is dissolved, whisk in 3 tablespoons of pumpkin puree, 2 teaspoons of ground cinnamon, 1 teaspoon of ground ginger, ½ teaspoon of ground nutmeg, and ¼ teaspoon of ground cloves. Add that tiny pinch of salt too. Whisk until everything is smooth and combined.
  3. Bring to a gentle simmer: Increase the heat to medium-high and bring the mixture to a gentle simmer. You want to see small bubbles breaking the surface — not a rolling boil. This should take about 3-4 minutes. Once it is simmering, reduce the heat to low.
  4. Simmer and meld the flavors: Let the syrup simmer gently for 5 minutes, whisking occasionally. Do not walk away — you want to make sure it does not boil over.
  5. Remove from heat and add vanilla: After 5 minutes, take the saucepan off the heat. Whisk in 1 teaspoon of vanilla extract. Let the syrup cool in the pan for about 5 minutes.
  6. Strain the syrup: Place your fine-mesh strainer over a clean glass jar or bowl. Slowly pour the syrup through the strainer. Use a spatula to gently press any liquid through the mesh.
  7. Cool and store: Let the syrup cool completely at room temperature before sealing the jar. This takes about 30 minutes. Once cool, screw on the lid and store it in the refrigerator.

Notes

Do not boil vigorously. Straining is not optional. Use room temperature ingredients. If the syrup crystallizes in the fridge, warm the jar in a bowl of hot water and shake. The flavors deepen after a day or two in the fridge.
