This easy homemade pumpkin spice cold brew concentrate is smooth, rich, and has just enough cozy pumpkin spice flavor without feeling like you’re drinking a candle. It’s made by steeping pumpkin pie spice directly into cold brew coffee for a deep, natural flavor that tastes like it came from a fancy coffee shop.

  • 4 cups (950 ml) cold water (filtered preferred)
  • 2 tablespoons (about 12 grams) pumpkin pie spice
  • 1 teaspoon (5 ml) pure vanilla extract
  • 1 tablespoon (15 ml) maple syrup (optional)
  • 1/8 teaspoon pinch of salt
  • For serving: milk or creamer of choice (e.g., whole milk, oat milk, heavy cream)
  • For serving: ice cubes

Instructions

  1. Combine the coffee and spices: In a large jar or pitcher, add the coarse ground coffee and pumpkin pie spice. Stir with a wooden spoon to distribute evenly.
  2. Add the water: Pour the cold water over the coffee and spice mixture. Stir gently until all grounds are saturated.
  3. Add the vanilla and maple syrup: Stir in the vanilla extract and maple syrup (if using). Add the pinch of salt and stir gently.
  4. Cover and steep: Cover the jar and refrigerate for 12 to 24 hours. 18 hours is ideal.
  5. Strain the cold brew: Line a fine-mesh strainer with cheesecloth or a nut milk bag and place over a clean pitcher. Slowly pour the cold brew mixture through. Let it drip naturally without pressing on the grounds (about 5-10 minutes).
  6. Store the concentrate: Transfer the strained cold brew concentrate to a clean jar or bottle. Refrigerate for up to two weeks.
  7. Serve and enjoy: Fill a glass with ice. Pour about 1/2 cup of concentrate over ice, then top with 1/2 cup of milk or creamer. Stir and adjust ratio to taste.

Grind coffee coarse to avoid bitterness. Don’t skip the salt—it balances flavors. Strain twice for clarity if desired. Use filtered water for best results. Steep for 12-24 hours; 18 hours is the sweet spot. The flavor improves after a day or two in the fridge.
