Ingredients

  • Large flour tortillas (8-inch, soft and pliable)
  • Thinly sliced deli turkey breast (8 ounces or 225 grams)
  • Cream cheese (4 ounces or 115 grams, softened)
  • Shredded cheddar cheese (1/2 cup or 50 grams)
  • Fresh spinach leaves (1 cup or 30 grams)
  • Red bell pepper (1 small, thinly sliced)
  • Green onions (2 stalks, finely chopped)
  • Garlic powder (1/2 teaspoon)
  • Dried parsley (1 teaspoon, optional)
  • Black pepper (to taste)
  • Mayonnaise (1 tablespoon, optional)

Instructions

  1. Prepare the cream cheese spread: In a mixing bowl, combine 4 ounces (115 grams) of softened cream cheese with 1/2 teaspoon garlic powder, 1 teaspoon dried parsley, and a pinch of freshly ground black pepper. Add 1 tablespoon of mayonnaise if desired. Mix until smooth and well blended (about 2-3 minutes).
  2. Lay out the tortillas flat on a clean surface or cutting board. Spread a thin, even layer of the cream cheese mixture over each tortilla, leaving about a 1/2-inch border around the edges.
  3. Layer approximately 4 ounces (115 grams) of thinly sliced deli turkey evenly over the cream cheese on each tortilla. Sprinkle 1/4 cup (25 grams) of shredded cheddar cheese over the turkey.
  4. Arrange fresh spinach leaves (about 1/2 cup or 15 grams per wrap), thinly sliced red bell pepper (about 1/2 small pepper per wrap), and chopped green onions evenly across the wraps.
  5. Starting at one edge, carefully roll each tortilla into a tight log, keeping the filling snug inside. Use plastic wrap to help roll and then wrap the pinwheel tightly. Chill in the fridge for at least 15 minutes.
  6. After chilling, unwrap and use a sharp knife to slice each roll into 1-inch (2.5 cm) thick pinwheels. Each wrap yields about 8 to 10 pinwheels.
  7. Pack the pinwheels neatly in a lunchbox with optional sides like baby carrots or cucumber slices. Serve chilled or at room temperature.
