This roasted garlic mashed potato graveyard is a crowd-pleasing showstopper with layers of creamy mashed potatoes and sweet roasted garlic, topped with a golden, crispy crust. Perfect for hosting, it’s a make-ahead dish that looks impressive but comes together with simple ingredients.

  • 3 whole heads of garlic
  • 3 tablespoons olive oil
  • Pinch of salt and pepper
  • 4 pounds Yukon Gold potatoes
  • 1 cup whole milk, warmed
  • 1/2 cup heavy cream, warmed
  • 6 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/4 cup sour cream
  • 2 tablespoons butter, melted (for topping)
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh chives or parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Cut the top off each head of garlic, exposing the cloves. Place each head on a piece of foil, drizzle with 1 tablespoon olive oil per head, and sprinkle with a pinch of salt and pepper. Wrap foil tightly around each head and roast for 40-45 minutes until cloves are soft and golden. Let cool, then squeeze cloves out. Set aside half the cloves for layering and mash the rest into a paste.
  2. While garlic roasts, peel potatoes and cut into uniform 2-inch chunks. Rinse in cold water to remove excess starch. Place in a large pot and cover with cold water by about 2 inches. Add a generous pinch of salt.
  3. Bring pot to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes until potatoes are fork-tender. Drain in a colander and let steam dry for about 2 minutes.
  4. Return potatoes to the pot (off heat) and mash with a potato masher or put through a ricer. Gently fold in the mashed roasted garlic paste, warm milk, warm cream, butter, salt, pepper, and sour cream. Taste and adjust seasoning.
  5. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter. Spread half the mashed potatoes evenly in the dish. Dot with half of the reserved whole roasted garlic cloves, pressing them slightly into the potato layer. Spread remaining mashed potatoes on top. Press remaining whole garlic cloves into the top layer.
  6. Brush the top with melted butter. If using, sprinkle Parmesan cheese evenly over the surface.
  7. Bake for 25-30 minutes until top is golden brown and edges are bubbling. For extra crispiness, broil for the last 2-3 minutes, watching carefully. Let rest for 5-10 minutes before serving.
  8. Garnish with fresh chives or parsley right before serving.

Notes

Roast garlic until soft and golden, not brown. Warm dairy before adding to potatoes to avoid gluey texture. Don’t overmix potatoes. Can be assembled a day ahead and refrigerated; add 10 minutes to baking time if starting from cold. For dairy-free, use plant-based butter and unsweetened oat milk. For extra flavor, fold in shredded cheddar or Gruyère.
