  • ½ cup baking soda (for boiling bath)

  • 8 ounces sharp cheddar cheese, freshly grated
  • ¾ cup (6 ounces) lager, pilsner, or Oktoberfest-style beer
  • 4 ounces cream cheese, softened
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • Salt and cayenne pepper to taste

Instructions

  1. Activate the yeast: In the bowl of a stand mixer (or large mixing bowl), combine warm water, brown sugar, and active dry yeast. Stir gently and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of bread flour to the yeast mixture. Mix on low speed with the dough hook until combined. Gradually add remaining 1 ½ cups flour, half-cup at a time, until dough pulls away from the bowl. Knead on medium-low for 5 minutes (or by hand for 8-10 minutes) until smooth and elastic.
  3. First rise: Form dough into a ball and place in a lightly greased bowl. Cover with plastic wrap or a towel. Let rise in a warm spot for about 1 hour, until doubled in size.
  4. Shape the bites: Punch down dough and turn onto a lightly floured surface. Divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch bite-sized pieces (about 40-50 total).
  5. Baking soda bath: Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper. Bring 8 cups of water to a boil in a large pot. Carefully add ½ cup baking soda (it will bubble). Reduce heat to a gentle simmer. Working in batches of 8-10, drop pretzel bites into simmering water for 20-30 seconds. Remove with a slotted spoon and transfer to prepared baking sheets, spacing 1 inch apart.
  6. Egg wash and salt: Brush each pretzel bite with egg wash. Sprinkle generously with coarse sea salt while still wet.
  7. Bake: Bake for 12-15 minutes, rotating pans halfway, until deep golden brown. Let cool on baking sheet for 5 minutes.
  8. Make the beer cheese dip: In a small saucepan over medium heat, combine beer and cream cheese. Whisk until melted and smooth (2-3 minutes). Reduce heat to low. Add shredded cheddar, Dijon mustard, Worcestershire sauce, and garlic powder. Stir constantly until cheese is melted and smooth. Do not let boil. Pour in cornstarch slurry and whisk for 1-2 minutes until thickened. Season with salt and cayenne to taste. Keep warm over low heat while serving.
