Easy German Apple Streusel Cake Recipe

Ingredients

  • Unsalted butter (½ cup, 113g), softened
  • Granulated sugar (¾ cup, 150g)
  • Large eggs (2), room temperature
  • Vanilla extract (1 teaspoon)
  • All-purpose flour (1½ cups, 190g)
  • Baking powder (1½ teaspoons)
  • Salt (¼ teaspoon)
  • Milk (⅓ cup, 80ml), room temperature
  • Apples (3 medium, about 450g), peeled, cored, and sliced into ¼-inch wedges
  • Lemon juice (1 tablespoon)
  • Ground cinnamon (1 teaspoon)
  • All-purpose flour (1 cup, 125g) for streusel
  • Brown sugar (½ cup, 100g), packed
  • Granulated sugar (¼ cup, 50g) for streusel
  • Ground cinnamon (1½ teaspoons) for streusel
  • Unsalted butter (½ cup, 113g), melted and slightly cooled for streusel
  • Pinch of salt for streusel

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan with butter or nonstick spray.
  2. Prepare the apples: Peel, core, and slice three medium apples into ¼-inch thick wedges. Toss with 1 tablespoon lemon juice and 1 teaspoon cinnamon. Set aside.
  3. Make the streusel: In a medium bowl, whisk together 1 cup flour, ½ cup packed brown sugar, ¼ cup granulated sugar, 1½ teaspoons cinnamon, and a pinch of salt. Pour in ½ cup melted butter (cooled slightly) and stir with a fork until clumps form. Set aside.
  4. Start the cake batter: In a large bowl, beat ½ cup softened butter with ¾ cup granulated sugar until light and fluffy, about 2 minutes.
  5. Add the eggs and vanilla: Crack in 2 eggs one at a time, beating well after each. Stir in 1 teaspoon vanilla.
  6. Combine the dry ingredients: In a small bowl, whisk together 1½ cups flour, 1½ teaspoons baking powder, and ¼ teaspoon salt. Add to the butter mixture in three additions, alternating with ⅓ cup milk. Stir just until combined.
  7. Assemble the cake: Spread the batter evenly into the prepared pan. Arrange the cinnamon-coated apple slices in a single layer over the batter, pressing them gently into the batter.
  8. Add the streusel: Sprinkle the streusel crumbs evenly over the apples, covering every bit of apple.
  9. Bake: Place the pan on the middle rack and bake for 45 to 55 minutes, until the streusel is deep golden brown and a toothpick inserted into the cake comes out clean or with a few moist crumbs.
  10. Cool: Let the cake cool in the pan on a wire rack for 20 minutes. Then run a knife around the edge and remove the springform ring. Let it cool completely—at least 1 hour—before slicing.

Notes

For clean slices, cool completely, then refrigerate for 30 minutes before cutting. Use a serrated knife and saw gently. The cake tastes even better on day two.
