A quick and easy recipe for fresh Caprese skewers featuring cherry tomatoes, fresh mozzarella, basil, and a tangy balsamic glaze, perfect for summer parties and light snacks.

Ingredients

  • Fresh mozzarella balls (bocconcini or ciliegine)
  • Cherry or grape tomatoes
  • Fresh basil leaves
  • Balsamic glaze or reduction
  • Extra virgin olive oil
  • Sea salt
  • Freshly cracked black pepper
  • Optional: toasted pine nuts or chopped walnuts
  • Optional: red pepper flakes
  • Optional: honey

Instructions

  1. Rinse cherry tomatoes and basil leaves gently under cold water. Pat dry with a clean kitchen towel or paper towels. If tomatoes are large, slice them in half.
  2. Place tomatoes in a small bowl and sprinkle with sea salt and freshly cracked black pepper. Toss lightly and let sit.
  3. In a small bowl, whisk about 1/4 cup (60 ml) balsamic glaze or reduced balsamic vinegar with 1 tablespoon (15 ml) extra virgin olive oil. Adjust to taste.
  4. On each skewer, thread one cherry tomato, one fresh basil leaf (folded if large), and one mozzarella ball. Repeat 2-3 sets per skewer if space allows. Arrange on a serving platter.
  5. Just before serving, drizzle the balsamic mixture over the skewers. Optionally, sprinkle fresh cracked pepper or toasted pine nuts on top.

Notes

Assemble skewers just before serving to keep basil fresh and avoid soggy tomatoes. Store components separately if prepping ahead. Soak wooden skewers in water for 10 minutes before grilling to prevent burning. Use fresh mozzarella balls for best texture. Season tomatoes with salt and pepper to enhance flavor.
