These easy freezer-friendly turkey and veggie meatballs are moist, flavorful, and packed with hidden vegetables. Perfect for meal prep, they bake up quickly and can be frozen for a quick and delicious dinner any night of the week.

  • 1 lb (450g) ground turkey (93% lean)
  • 1 medium zucchini (about 150g), grated and squeezed dry
  • 1/2 cup (75g) finely diced bell pepper (red, orange, or yellow)
  • 1 cup (30g) packed fresh spinach, finely chopped
  • 1/2 cup (60g) breadcrumbs (plain or Italian-style)
  • 1 large egg
  • 1/3 cup (40g) shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for greasing baking sheet)

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil and brush lightly with olive oil.
  2. Grate the zucchini using the large holes of a box grater or a food processor. Transfer to a clean kitchen towel or paper towels and squeeze firmly to remove as much liquid as possible.
  3. Finely dice the bell pepper and chop the spinach into small pieces (no larger than a pea).
  4. In a large mixing bowl, combine the squeezed zucchini, diced bell pepper, chopped spinach, minced garlic, egg, and shredded mozzarella. Mix with a fork until evenly distributed.
  5. Add the ground turkey, breadcrumbs, dried oregano, salt, and black pepper. Use your hands to gently mix until just combined (about 30 seconds). Do not overmix.
  6. Using a cookie scoop or tablespoon, portion the mixture into uniform balls (about 1.5 tablespoons each), yielding 20-24 meatballs. Roll gently between your palms to shape.
  7. Place the meatballs on the prepared baking sheet, spacing them about 1 inch apart.
  8. Bake for 18-22 minutes, until golden brown and cooked through (internal temperature of 165°F / 74°C).
  9. Let cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
  10. For freezing: Arrange cooled meatballs in a single layer on a parchment-lined baking sheet and freeze for 1-2 hours until solid. Transfer to a freezer-safe bag or container, removing as much air as possible. Label with date and contents.

Notes

Squeeze the zucchini completely dry to prevent soggy meatballs. Do not overmix the meat. Flash freeze meatballs individually before bagging to prevent clumping. Frozen meatballs can be cooked directly from frozen—add 5-7 minutes to cooking time.
