  • 1/2 cup plain breadcrumbs (or Panko)
  • 1 large egg, lightly beaten
  • 1/2 medium yellow onion, grated (about 1/4 cup with juices)
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried parsley or thyme (optional)
  • 1/3 cup ketchup (for glaze)
  • 1/4 cup packed light brown sugar (for glaze)
  • 1 teaspoon Dijon mustard (for glaze)

Instructions

  1. Line a 6-quart slow cooker with parchment paper or aluminum foil, leaving overhang for handles.
  2. Grate half a medium yellow onion on a box grater into a small bowl to yield about 1/4 cup with juices.
  3. In a large mixing bowl, combine ground turkey, breadcrumbs, beaten egg, grated onion with juices, minced garlic, 1/4 cup ketchup, Worcestershire sauce, salt, pepper, and optional herbs. Mix gently with hands or a spatula until just combined.
  4. Transfer the mixture to the prepared slow cooker and shape into a rounded loaf, about 6 inches long and 4 inches wide, leaving space around the edges.
  5. In a small bowl, whisk together 1/3 cup ketchup, 1/4 cup packed light brown sugar, and 1 teaspoon Dijon mustard until smooth.
  6. Spoon about half of the glaze over the meatloaf, spreading evenly. Reserve the remaining glaze.
  7. Cover and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours.
  8. About 30 minutes before the cooking time ends, spoon the remaining glaze over the meatloaf. Cook uncovered for the last 30 minutes if possible to thicken the glaze.
  9. Once the internal temperature reaches 165°F (74°C), lift the meatloaf out using the parchment or foil handles. Let rest on a cutting board for 5 to 10 minutes before slicing.

Notes

For best moisture, use 93/7 ground turkey and don’t skip the grated onion. Let the meatloaf rest before slicing to prevent crumbling. Avoid lifting the lid during cooking to maintain temperature. The glaze can be adjusted to taste—add more mustard for tanginess or more brown sugar for sweetness.
