  • 3 cups fresh broccoli florets
  • 1/3 cup honey

  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1 teaspoon toasted sesame oil (for garnish)

  • Sliced green onions (optional, for garnish)

Instructions

  1. Slice the flank steak or sirloin into thin strips, about 1/4-inch thick, cutting against the grain. Pat dry with paper towels.
  2. Optional: Heat 1 tablespoon oil in a large skillet over medium-high heat. Sear the beef strips in batches for 1-2 minutes per side until browned. Transfer to the slow cooker.
  3. In a small bowl, whisk together honey, soy sauce, and minced garlic. Pour over the beef in the slow cooker and stir to coat.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the beef is fork-tender.
  5. About 30 minutes before serving, add the fresh broccoli florets to the slow cooker. Stir gently, cover, and cook on HIGH for 30 minutes until tender-crisp.
  6. In a small bowl, mix cornstarch and cold water to form a slurry. Pour into the slow cooker and stir well. Cook uncovered on HIGH for 10-15 minutes until the sauce thickens to a glossy consistency.
  7. Drizzle with toasted sesame oil, sprinkle with sesame seeds and green onions if desired. Serve immediately over steamed rice, noodles, or cauliflower rice.

Notes

For best results, slice beef against the grain and add broccoli only in the last 30 minutes to keep it crisp. Brown the beef for extra flavor if time allows. Use low-sodium soy sauce to control saltiness. The sauce thickens with a cornstarch slurry at the end.
