This easy crockpot chicken and rice is a 5-ingredient dump dinner that delivers tender chicken and creamy rice with minimal effort. Perfect for busy nights or impressing guests, it’s comfort food at its finest.

  • 2 pounds boneless skinless chicken thighs or breasts
  • 1 ½ cups uncooked long-grain white rice
  • 1 can (10.5 ounces) cream of chicken soup
  • 2 cups low-sodium chicken broth
  • 1 packet (1 ounce) onion soup mix

Instructions

  1. Rinse chicken pieces and pat dry. Trim excess fat if using thighs. Place chicken in a single layer in the bottom of a 6-quart crockpot.
  2. Sprinkle uncooked rice evenly over the chicken. Do not stir.
  3. In a medium bowl, whisk together cream of chicken soup, chicken broth, and onion soup mix until smooth. Pour over chicken and rice, ensuring everything is mostly submerged.
  4. Gently stir to combine, being careful not to overmix.
  5. Cover and cook on low for 4-6 hours or on high for 2-3 hours. Do not lift the lid during cooking.
  6. Check that chicken is cooked through (internal temperature of 165°F) and rice is tender. If rice is still firm, cook for an additional 15-20 minutes with lid on.
  7. Remove chicken to a cutting board and shred with two forks. Return shredded chicken to crockpot and stir into rice. Adjust salt and pepper to taste. Serve hot, garnished with fresh parsley or a squeeze of lemon if desired.

Notes

Do not lift the lid during cooking to maintain heat. For best results, use long-grain white rice and avoid instant rice. Chicken thighs stay juicier than breasts. If using breasts, check at 3 hours on low to prevent drying out. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
