Instructions

  1. Prep the chicken: Pat chicken thighs completely dry with paper towels. Place skin-side up on a plate and refrigerate uncovered for 15-30 minutes to further dry the skin.
  2. Season the chicken: In a small bowl, mix salt, pepper, garlic powder, and paprika. Sprinkle evenly over both sides of the chicken, pressing gently into the skin. Let sit at room temperature for 10 minutes while oven preheats.
  3. Preheat oven to 400°F (200°C) with rack in middle position.
  4. Sear the chicken: Heat an oven-safe skillet over medium heat. Add 1 tablespoon butter. Once melted and foaming, place chicken skin-side down in a single layer (work in batches if needed). Cook undisturbed for 6-8 minutes until skin is deep golden brown and releases easily.
