A quick and comforting creamy tomato tortellini soup made with just five simple ingredients, perfect for busy weeknights and cozy dinners.

Ingredients

Scale
  • 9 oz cheese tortellini (fresh or frozen)
  • 1 can (28 oz) crushed tomatoes
  • 4 cups vegetable or chicken broth (low-sodium preferred)
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • Optional: fresh basil or parsley for garnish

Instructions

  1. Mince the garlic finely.
  2. Heat a large soup pot over medium heat and add a splash of olive oil or a small pat of butter. Sauté the minced garlic until fragrant, about 1 minute, being careful not to burn it.
  3. Add the crushed tomatoes and broth to the pot. Stir to combine and simmer for 10 minutes. Taste and add salt if needed.
  4. Bring the soup to a gentle boil and add the cheese tortellini. Stir gently and cook according to package directions, usually 3 to 5 minutes, until tender but still holding shape.
  5. Lower the heat and stir in the heavy cream. Warm through for 2 to 3 minutes without boiling to avoid curdling.
  6. Adjust seasoning with salt and black pepper as desired. Add fresh basil or parsley just before serving.

Notes

Use low-sodium broth to control saltiness. Avoid overcooking tortellini to prevent mushiness. Do not boil after adding cream to prevent curdling. Fresh garlic and good quality crushed tomatoes improve flavor. Gluten-free tortellini can be used for a gluten-free version. Heavy cream can be substituted with half-and-half or coconut milk for lighter or dairy-free options.
