  • 2 cloves garlic, minced
  • 1 tbsp fresh lime juice

  • ½ tsp red pepper flakes (optional)
  • 1 head butter lettuce or 810 large leaves, washed and dried
  • 2 green onions, thinly sliced
  • ¼ cup chopped peanuts
  • A small handful fresh cilantro, chopped (optional)

Instructions

  1. Cut chicken breasts into roughly 1-inch bite-sized pieces and pat dry with paper towels.
  2. In a medium bowl, whisk together peanut butter, coconut milk, soy sauce, honey, lime juice, minced garlic, grated ginger, and red pepper flakes until smooth and pourable.
  3. Heat a non-stick skillet over medium-high heat and add 1 teaspoon of oil.
  4. Add chicken pieces in a single layer without overcrowding; cook undisturbed for 3-4 minutes until golden brown on the underside.
  5. Flip chicken pieces and cook another 3-4 minutes until cooked through and no longer pink inside (internal temperature 165°F). Remove from heat.
  6. Lower heat to medium-low and pour peanut sauce over chicken in skillet. Stir gently to coat evenly and warm through for 2-3 minutes until sauce thickens slightly. Avoid boiling.
  7. While chicken cooks, separate butter lettuce leaves, rinse, and pat dry.
  8. Spoon creamy peanut chicken onto each lettuce leaf and garnish with sliced green onions, chopped peanuts, and cilantro. Serve immediately.

Notes

If sauce is too thick, add a splash of coconut milk or water to loosen. For more peanut flavor, add extra peanut butter before serving. Avoid overcrowding pan to ensure proper browning.
