  • 2 boneless, skinless chicken breasts (about 1 pound total) or 3 cups shredded rotisserie chicken
  • 8 ounces cream cheese, softened and cut into cubes
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup ranch dressing
  • 1/2 cup crumbled blue cheese (optional)
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  1. Place the chicken in the slow cooker.
  2. Pour the hot sauce over the chicken and add the butter. Do not stir.
  3. Cook on low for 3-4 hours or high for 1.5-2 hours, until the chicken reaches an internal temperature of 165°F and shreds easily.
  4. Remove the chicken to a cutting board and shred into bite-sized pieces. Return to the slow cooker.
  5. Add the cream cheese, cheddar, ranch dressing, garlic powder, and onion powder. Stir until the cream cheese melts and the mixture is smooth.
  6. Cook for another 30 minutes on low, stirring once halfway through.
  7. Taste and adjust seasoning, adding more hot sauce or ranch as desired.
  8. Sprinkle crumbled blue cheese on top before serving, if using.
  9. Serve warm from the crockpot on the ‘warm’ setting.

Notes

Do not add cream cheese at the beginning with raw chicken; it may curdle. Soften cream cheese before cubing for easier melting. Shred chicken while warm for best results. Use full-fat dairy for creamiest texture. Leftovers keep in the fridge for up to 4 days and can be frozen for up to 3 months.
